
Spicy Chilli con Carne
Watching the game with friends or family? Movie night? Need an easy recipe to fight the winter blues? This one's for you!
Not a meat-eater, don't eat beef? No problem - change the minced beef & stock for veggie or chicken versions.
INGREDIENTS (Serves 4)
- 1 large onion, diced
- 1 red paprika, seeds removed & diced
- 2 garlic gloves, crushed/ finely chopped
- 1 tbsp olive or coconut oil
- 1 heaped tsp chilli powder or try our Carolina Reaper Chill Salt
- 1 tsp ground paprika
- 1 tsp ground cumin
- 500g minced beef*
- 1 beef stock cube*
- 400g can chopped tomatoes
- 1 tsp sugar*
- 2 tbsp tomato paste
- 400g red kidney beans, drained & rinsed
METHOD
- Heat the oil & fry the onions over medium heat for ∼ 5 mins until slightly soft.
- Add the garlic, diced paprika, ground chilli, paprika & cumin, stir and cook another ∼ 5 mins.
- Add the minced beef, brown for another ∼ 5 mins.
- Crumble the stock cube into 300ml hot water, add to the pan.
- Add the tomatoes & tomato paste, sugar, season with salt & pepper (again, use our chilli salt here for best results), & stir well.
- Bring to a boil, cover & simmer gently for ∼ 20 mins, stirring occasionally.
- Uncover & add the kidney beans, gently simmer for another ∼ 10 mins until the consistency looks right (add a little water if needed).
- Taste, season again with salt & pepper if required, now remove from the heat and let it rest for ∼ 10 mins before serving.

Tips & Serving Suggestions...
- Substitute the sugar for ∼ 10g dark chocolate or 1 tbsp cocoa powder to intensify the flavour for an even tastier result.
- Why not serve with white rice, over nachos or in a tortilla wrap?
- Need it spicier? Include some dried or fresh chillies, or add some La Picante or Sriracha hot sauce when serving for a kick!
- Made it too hot? Add grated cheddar cheese and sour cream.
- For a 'Latvian' twist, just add sour cream and fresh dill as we did this time ;)
