Spicy Shakshuka

Tasty, healthy & gently spicy... shakshuka is a classic breakfast/ brunch dish that will set you up for the whole day. Serve with warm, toasted bread to mop up those juices!

INGREDIENTS (Serves 4)

1. Base spices for frying:-

  • 2 tsp tomato paste
  • 2 tsp paprika powder (smoky/ sweet - you choose)
  • 2 tsp cumin seeds
  • 6 cloves garlic, crushed
  • 2-4 dried Kashmiri chillies (you can use fresh too)
  • 1 tbsp black pepper
  • 1 tsp salt (use our chilli salt for a spicier shakshuka!)

2. Veggies for frying:-

  • 1 large onion, sliced
  • 2 peppers, sliced (green, red, yellow - you choose)

3. The rest

  • 1.5 kg fresh tomatoes, cored and quartered
  • 1 tbsp cumin seeds
  • 2 free-range eggs per person
  • Fresh coriander (optional, or use dill if you're feeling Latvian!)

 METHOD

  1. Fry the sliced onions & peppers in olive or coconut oil over a high heat, until they soften slightly  5 mins.
  2. Add the base spice ingredients, mix & fry another 5 mins.
  3. Add the tomatoes & cumin seeds, stir well, cover & cook for 10 mins.
  4. Stir again, taste & season with salt & black pepper if required.
  5. Cook uncovered for another 10-15 mins: you want the sauce to thicken and reduce down so the flavours itensify, if some sticks to the bottom & caramelizes a bit, all the better!
  6. Make wells in the sauce & add 2 eggs per person, cover again & let the eggs poach for 5 mins (this depends on how firm you want them).
  7. Serve with fresh coriander, warm crunchy bread & some good coffee.
  8. ENJOY!

Want it hotter? We recommend spicing it up by substituting the salt for one of our chilli salts, you can also add as much Spicy Latvia Sriracha or La Picante hot sauce while you eat!
